● Pinsa crust is a lighter and healthier version of a typical pizza pie. ● Pinsa uses less gluten than a typical pizza crust and is fermented for a much longer time period. ● The long fermentation period along with rice and chickpea flours creates a crust that is crunchy on the outside and soft inside. ● The dough contains 80% to 90% of water, while a pizza crust typically reaches 50% to 60% hydration, which is why Pinsa crusts are lighter and easier to digest. Although a typical pinsa crust is oval in shape we create both oval and round crusts.
